2019

In early 2019, Talde announced that his Park Slope restaurant location would shutter for good after nearly seven years in business.

2012

In January 2012, Talde opened the restaurant Talde, in Park Slope, Brooklyn with partners David Massoni and John Bush, with the success of their New York City restaurant they opened a Talde branch in Miami. The restaurants are known for a contemporary twist on Asian flavors including Thai, Vietnamese, Japanese and Filipino. In 2013 Talde teamed up with reality show stars "The Kitchen Cousins" John Colaneri and Anthony Carrino and opened a Talde restaurant in Jersey City. Recently, together with his partners Talde has opened two more restaurants (Massoni and Atlantic Social) in New York City. They also recently opened The Corner (pizza) & Clares (chicken and Burgers) at Chris Vila’s new Mega food hall in West Palm Beach, Florida known as Grandview Public Market. They are also currently in the process of opening a new rooftop bar & lounge called "The Heights” on East 31st Street, New York City. Talde has traveled extensively, including to the Philippines, Spain and the Caribbean. He has denounced seal hunting in ordinance with The Humane Society.

2008

Talde competed in the fourth season of Top Chef in 2008. He came in sixth place, being eliminated after his team (for which he was captain) lost in the "Restaurant Wars" competition episode. In 2010, he was invited for the Top Chef: All-Stars season. He again came in sixth place, this time being eliminated when his amberjack stew failed to impress the judges. Talde later became a sous chef at Buddakan.

2005

Talde graduated from the Culinary Institute of America. He helped open the renowned restaurant Jean Georges Vong in Chicago. He has also worked with chefs such as Carrie Nahabedian and Shawn Mcclain. In 2005, he moved to New York City to open Morimoto with Masaharu Morimoto.
