He studied music at the Conservatoire de Paris, and began his career as a composer in the 1960s. He has composed music for over 100 films, and has also written music for television and theater. Mallory has won several awards for his work, including the César Award for Best Music Written for a Film in 1983 for his work on the film Le Dernier Combat.
