Gancarczyk began his career with his hometown club, Debica, before moving to Wisła Kraków in 2002. He has since made over 200 appearances for the club, winning the Ekstraklasa title in 2004 and the Polish Cup in 2006. On 14 October 2009, during Poland's last game of the 2010 FIFA World Cup qualifiers against Slovakia, Gancarczyk scored an own goal in the 3rd minute of the game, condemning Poland to a 1–0 defeat and enabling Slovakia to qualify for the World Cup.
