He was drafted by the Buffalo Bills in the fourth round of the 2003 NFL Draft. He played college football at Texas Tech. Williams attended Andrews High School in Andrews, Texas, where he was a two-time All-District selection. He was also a two-time All-Big 12 selection at Texas Tech. Starting in 2014, Williams was the football strength and conditioning coach for the Andrews, Texas school systems athletic program. He left that job in 2016 to become an assistant strength coach at the University of Wisconsin.

Williams was signed by the Florida Tuskers of the United Football League on September 9, 2009. He was selected by the Omaha Nighthawks in the 2010 UFL expansion draft and was on their opening day roster for the 2010 and 2011 seasons.

He began college career at Texas Tech, but transferred to the University of Alabama in 2001. Shaud had to sit out year to satisfy NCAA transfer rules. In 2002, due to an early season-ending injury to starter Ahmaad Galloway, Williams was effective immediately. After taking his first carry from scrimmage against the University of Arkansas in 2002, Williams raced untouched 80 yards to the end zone. Shaud shared the running duties with Santonio Beard. The duo combined for a virtually unstoppable rushing attack engineered by head coach Dennis Franchione. The Crimson Tide finished the season with 10-3 without a bowl appearance due to being on probation. In 2003, Shaud Williams rushed for over 1,300 yards in his first full year as a starter. Shaud also played shortstop for the Crimson Tide on Alabama's baseball team.

During his career at Andrews, he rushed for 7,712 yards, which ranks 10th on the all-time records for Texas high school football. In his senior season, he rushed for 2,121 yards and 27 touchdowns, leading all rushers in class 4A.
