Biurrun began his career in the youth system of Real Madrid, making his debut for the first team in 1979. He went on to make over 200 appearances for the club, winning two La Liga titles and two Copa del Rey titles. He also had a brief spell with Atlético Madrid, before retiring in 1992. Biurrun has since gone on to become a successful coach, managing several clubs in Spain, including Real Madrid Castilla, Real Zaragoza, and Real Betis. FC Barcelona took an option to purchase Biurrun, but in May 1986 they signed Athletic Bilbao's goalkeeper Andoni Zubizarreta instead and an agreement was reached for the former to join the Basque club as the latter's replacement. Deemed eligible to play for them due to his roots, he established himself as a La Liga player, rarely missing a match and making a career-high 41 appearances in the 1986–87 campaign as his team finished in 13th position; subsequently, he joined RCD Español as a replacement for the recently departed Thomas N'Kono.
